Default I want Word to list 9 recent documents on its menu.

How do I set Word to list the maximum number of most recently accessed
documents in its File menu? (The max is 9, I think)

Click on Tools and Options and the General Tab. You can set your preference
for the maximum number of documents there. I hope this has been helpful to
you.
