Default protect drop down box but not rest of document

Is there an easy way that I can "protect" 2 or 3 drop down boxes in a
document - so a student could select a course in one, date in another, and
then complete a table taht is not protected?

Insert a section break between the form fields and the free-form table and
protect only the forms section.

I have tried to protect only the section between the section breaks using
some of the directions I have found but it does not seem to work - can you
suggest a place where I might find some directions that you feel might work?

It will depend on what version of Word you have, which you have not stated.
