In my document at many tables and figures. All are referred to at least
once somewhere in the preceding paragraphs. I have to edit this with Track
Changes turned on, so any deleted tables or figures are still going to be
counted by Word. In large documents, numbering all the tables and figures
gets to be a real pain!

I was trying to make sense of the SEQ field Help file, but I'm a bit fuzzy
on how it might work for me, and whether it would work at all for this
situation. From what I think I understand, if I insert a table header of
"TABLE 4-27-{SEQ tbl}", all tables would sequentially number. There's
something about using a bookmark to refer back to the field, but I'm not
sure how I would insert a reference in the preceding paragraph - "is shown
in Table 4-27-XXX" - so the "XXX" would pick up the correct SEQ number.

Lastly, as the last thing before shipping out the document, I would have to
(probably by macro) go through each SEQ field, pick up the number, then
delete the field and insert the number as plain text. Assuming this isn't
an extremely Neanderthal way of operating, what objects/properties would I
need to look at for this?

1. Run a test and see if these commands don't do what you need:
- Insert/References/Insert Caption
- Insert/References/Insert Cross-Reference

2. If they do, then you don't need to worry about creating the stuff
manually. The SEQ fields and the bookmarks are generated for you by Word

3. As to distributing the file: it depends on
- why you'd want to remove the dynamic nature of the numbering and
cross-refs
- if the entire document (including things like date fields) should be
static

Generally, if everything should be static text, you can Ctrl+A, Ctrl+Shift+F9
to turn the fields into text

1. I created a new label as "TABLE 4-27-". When it inserted, there was a
space between the last dash and the number. If I use this, I'll put a
button on a toolbar; hopefully I can just write a line or two into the macro
to delete that space.
2. When the Cross-Reference inserted, it grabbed the whole thing, including
the all-uppercase "TABLE" and the table title, which I don't need. I
managed to work inside it to change things without deleting the entire
reference, but that's rather a pain! Again, hopefully I can write it into a
macro, but it would be nicer if I could reset a few options.

Because when the end recipient gets this doc and strips out things and
emails it, I now have bad references.

Check the Insert Cross-Reference options. you should be able to pick up just
the label and number (list at the right of the dialog box).
