Default Using of toolbars with later versions of Office?

I used to use multiple, customised toolbars, enabling me to format and layout
tables, review documents, zoom and access page layout etc at one click. With
the use of the Robbon and Quick Access toolbar, even customised across the
screen, many of these fuinctions now require multiple clicks, which is hugely
frutrating (well not in the scheme of things, but in the context of Word
usage, which takes up a large portion of most days). Has anyone come up with
a way of increasing one-click access to functions?
