I think it's more or less normal. "Mark All" adds the fields, updating the
TOC removes them because it regenerates the TOC and deletes any edits that have been made to it. If you view field codes (Tools | Options, View tab) you should be able to manually remove the XE fields from the TOC after running Mark All, if still necessary. Find&Replace on the selected TOC might speed it up. However, I have never used "Mark All," so am speculating. It probably would be nice if Word's Index feature were smart enough to exclude text in a TOC field, but apparently not.
