Default Using Outlook Categories in a Word mailmerge

I cannot see a way to utilize the Category in an Outlook contact record to
define a subset of my databsae for a mailmerge. Am I missing something? I
can see how to manually select records from the database. It seems that
there must be a way to do this, but I can't seem to figure it out!
