Default Why can I only have one word document open at a time?

If I have a word document open and try to open another word document, the first
one is automatically closed. The same thing happens with Excel spreadsheets.
What settings do I have to change to correct this?

Are you sure you're not just failing to see the other documents because you
don't have "Windows in Taskbar" checked on the View tab of Tools | Options?
If you minimize the open document, do you see another one behind it?
