Default Business Letters page 2

When typing a business letter on letterhead, what is the appropriate header
for the 2nd page? Page number, date, etc?

Page number and date, yes.
I usually put in the name of the addressee and the subject of the letter as
well. The date, addressee and subject are all picked up from the opening
paragraphs using StyleRef fields. (That way if I change any of these on the
first page, they are automatically changed in the continuation header and I
don't even have to do anything with the header myself.)
