Is it possible to add help text to a WORD DOC (.doc) form that pops-up when
the mouse hovers over the field?

the only thing I know to do for that is to add it to the help text in the
form field and it will appear on the status bar.

Not really. You can use the comment function and with some display options
(balloons off) it will do this. If we are talking an online form, you can
add custom help files to each field but they respond to the F1 key or show
up in the status bar.
