Default Create an invoice template but keep certain text in place

I want to create an invoice template that will allow me to enter data but
keep certain text anchored in place. For instance, I want to be able to fill
in an address but limit this to about 4 lines of text - I do not want the
whole document to move when I hit return. Also when I need to fill in the
figures at the bottom I do not want "Total" and "VAT" etc., to move. I am
using Word 2000. Many thanks.

Create a fill-in form within a table structure. Set the row(s) height of the
table to "exactly".
