Default Formatting a passage in Word reformats the whole document

I currently am working on a 60 page document (multiple sections) where when a
passage of text is selected and formatted (eg change a word to italics), the
whole document is formatted to that style. On selecting "undo", it returns
the rest of the document to its previous configuration, but correctly formats
the selected passage. No problem! except when I do not realsie the change in
format until some time later (such as tab settings) and then have to either
return to a previous known state or locate & fix the changes.
How do I stop this??
