I want to be able to close the last doc in Word 2007 and leave the app
open--I am terminally frustrated by having to go back and open the app again
every time. (Old Word habits die hard.)

You can use Office Button=Close

While at 'Close' you can right click it to add it to the Quick Access Toolbar (QAT). You can also right click on the QAT and choose
Customize and from the 'All commands' category add 'Close All, as well.
