When I type a phone numeber (ie xxx-xxxx or xxx-xxx-xxxx) I don't want word
to split it across lines. Is there any way to prevent that from happening
and treat the number as a word that can't be hyphenated?

Use a nonbreaking hyphen (Ctrl+Shift+hyphen) instead of a plain hyphen.

See http://word.mvps.org/FAQs/General/InsertSpecChars.htm for more info.
