Is it possible to use the format "Page 1 of N" ?

Page numbers in body, not header or footer
That depends on what you are trying to achieve. If you have a two page merge
document each page would then show page 1 of x or page 2 of x. Where x is the total number of pages in the merge. This would be repeated for every record. If you want the number of pages for each record you need to change the {Numpages} part of the field grouping to {SectionPages}. Open the header/footer Press ALT+F9 to toggle the display and edit NUmpages to read Sectionpages.
