I want to update the page numbers only in my Table of Contents, since I have
changed some of the formatting of the text. However, when I tell Word to
Update Field, it doesn't ask if I want to update entire field or page numbers
only (it just updates the whole field). I want to do page numbers only--how
can I?

If the problem is that direct formatting is reflected in your TOC, you
should remove the direct formatting from the headings and change the
styles used for them instead. See
