Default Mail merge e-mail character encoding

Does anyone know how to specify the character encoding used in email
produced by mail merge? I was sending a Word file containing both
Traditional and Simplified Chinese characters using mail merge email, and
the resulting email uses gb2312. However, I would like to use UTF-8 because
some recipients are using email clients that cannot read gb2312.

Thanks!

I suspect this is a function of your e-mail application. In Outlook
investigate tools options mail format international options and
uncheck 'auto select encoding for outgoing messages'. Which presumably
causes the e-mail to choose the most suitable encoding for your Chinese
characters.?

Thanks. After unchecking that option, the resulting email is in UTF-8.
