If you insert the date into a template, how do you make it so that it
automatically updates?

Default How to Automatically Update the Date

Insert a date field, however it is not normal for dates inserted into new
documents to update. It is more usual to display the date the *document* was
created - and to this end, you could insert a CREATEDATE field in your
template. New documents created from the tempalte would show the dates those
documents were created.
