Default Automatic Update of Document Fields

I am trying to figure out how to put a Customer Order Number and a Customer
Name on the first page of a 25 page procedure and then have those fields
automatically replaced throughout the document in many places. Like
referencing a cell in Excel, if you change that cell all referenced cells
also change.

Thanks in advance for your help!
