Default Word online document

While making an online document I discovered that in the dropdown form field
you can only have 25 items. Is there any way to increase that number?

There's no way to increase the capacity of the dropdown formfield. As an
alternative, see http://support.microsoft.com/?kbid=306258 for instructions
on how to create a userform containing a combobox.
