You can assign/reassign keyboard shortcuts in Tools/Customize/
Keyboard.

Almost all keys can be reassigned through the Tools Customize Keyboard
dialog (see
http://www.word.mvps.org/FAQs/Custom...oToHotkey.htm). If
memory serves, the F1 key won't accept a reassignment.
