How to number and cross-reference displayed formulae in word2007 (was easily
done with math type before)?

Default Numbering formula in word2007?

From the References Tab, select Insert Caption from the Captions chunk.

To refer to it, select Cross-reference from the Links chunk of the Insert
tab
