Default "set language" in Word 2007?

I'm using Word 2007 on Windows XP.

One of the things that I like to do in a doc before I finish it is to
select all, set the language to U.S. English, and re-run the spell check.

I can't figure out how to set the language for all styles in my 2007 doc.

I'm in Review Spelling, but I can't see anything relevant there for
languages. (I see that "English" is listed in the "Research" drop-down
area, but I don't think that does what I want.)

I've right-clicked in every area of the Review Spelling group, but I
can't see anything for setting the language for everything in the
document. (Yet when I run the spell check, it indicates that some text
might have been skipped because it was set to "Do not check spelling or
grammar.")

I've looked at Office Word Options Proofing, but can't see anything
there that relates to language settings.

I've also referred to Microsoft's mapping Excel file (which maps XP
command locations to locations in Word 2007) and while it indicates that
XP's Tools Language (Set Language) is mapped to "Review Proofing
Set Language" I can't find it.

Yar.

So, is there a Word 2007 equivalent to XP's Tools Language Set Language?
