Why, does the £ not show correctly 'sometimes' on a merged document created
by mail merge?

Where does the pound sign come from? The (what) data source? Have you
tried inserting it in Word directly (before or after a merge field)?

Where does the pound sign come from?
It is part of the currency format specified for the field.

The enigma is that it works but not always.

If the data source is Excel or Access, then the data formatting is ignored
and must be applied to the fields.

In your data source, I presume? What is it? Excel? Depending on mail
merge connection method to the data base, Word does not "see" formatting
of fields, say, in Excel. You then need to choose a different connection
method or format the field in Word (or, as in this case, simply add the
Pound sign there):

Date, Phone Number, and Currency fields are merged incorrectly when you
use an Access or Excel data source in Word
