Default Encoding

When I tried to open my scan (word document), it was not in English. My old
scans are no longer in English.

Please tell me how to correct.

A scan produces a picture of the original. Word can insert that
picture *as a picture* but it can't "read" the text. For that, you
have to use optical character recognition (OCR) software to recognize
the shapes of the letters and output a Word document.
