As shown below, Word does not recognize Windows Mail as a mail handler. Thus
I cannot simply send a document as an email from Word.

Correct. Windows Mail does not provide the necessary MAPI 'hooks' for Word to use it to send email from all of the choices, using
Method 2 from
http://support.microsoft.com/kb/918792
should enable the use of Method 3.
