Default How do I turn off auto format in Word 2003?

In Word 2003, when I use a formatting command, such as bold face one word the
command is applied to the entire document. I am forced to do a cancel last
command (cntrl-z) and re do the format request. This happens for all
formating, e.g., paragraph indent, paragraph center, character font and size,
etc. I would like to do be able to selectively do single caracter, word or
sentence formating without having to go through multiple key strokes to undo
and then do again.
