Is there a way to number things in a screen shot in Word when writing an
instruction sheet

Use a graphics editing program. (You could use SnagIt, which would allow you
to do whatever you want from the screen shot to the editing inside one
program.)

Is there anyway from Word without having another program?

I supposed you could fiddle around with text boxes but it would be so much
easier, and nicer looking, if you use the proper tool (translation: program)
for the job.

I believe you are asking about inserting captions for the images? Such
as Figure 1 - Screen shot description?

If that's what you want, select the image and go to
Insert/Reference/Caption.
