Default Make keep destination formatting the default

I normally want text that is pasted into word documents or excel spreadsheets
to keep the formatting of the destination document. Can I switch the default
position to this, rather than having to format individually when I am doing a
lot of pasting.

No, unfortunately that's not possible. But you could record a macro for the
paste actions and run that, instead?
