Default How do I retain the original date on word documents?

I have vista. When i type a letter and then save it in my documents, every
time I re-open the letter, the current date (and not the original date I
typed it on) is shown on the letter itself. How do i retain the original date?

Also I am having great trouble printing envelopes. In Word 2003, one could
highlight the address on the letter, open the envelope dialogue box and paste
into the address panel. In the current version of Word, the address always
appears in double spacing. I have tried highlighting single spacing in the
Heading Option and although this works for the address on the letter itself,
it does not for the envelope. Please help me acheive single spacing on
envelopes.

Thank you.

To answer your first question: Assuming that you are using Word, you can
change the field that displays the date to CREATEDATE. First press Alt+F9 to
show field codes, make the modification, press F9 to update, and press
Alt+F9 again to hide field codes.

I don't want the "Creation Date" I want a date I entered , which could be after the creation date to stay constant. I also want the date in the header to match the date in the body of the letter.
