There is a "total editing time" entry in the File Properties dialog that shows
the number of minutes the document has been open. However, I wouldn't trust it
as the basis for billing a client -- and I would also advise the client that it
isn't a valid measure for verifying the billed time.

Even assuming that the entry accurately reflects the time the document is open
(and I won't guarantee that), it can't account for time when you aren't looking
at the document, such as taking an unrelated phone call.

Instead, get an electronic timer like the ones used in chess tournaments, and
train yourself to turn it on and off when you start and stop any billable
activity.
