Default Protecting a Form

Here is what I am trying to accomplish..

I have a form that is in 3 sections. Section 1 form fields (name, date,
phone), Section 2 (middle of documnet) is a inserted Excel worksheet and
Section 3 is a form field (approvals).

My question how can I protect the form fields but let the user edit the
Excel Worksheet?

I can email the template if you need to see it.

Instead of using the padlock to protect the form, use Tools | Protect
Document. When you protect a document containing more than one section,
you'll be presented with a dialog that will allow you to select which
sections you want protected.

I'm not getting the options to select what section to protect.

Does your document contain more than one section? Press Ctrl+End to go to
the end of the document. On the status bar, what number follows "Sec"?
