Default How do I create keystops for variable information in Word merges?

Similar to Word Perfect, I need to create keystops in my Word merge documents
for information that is variable and cannot be placed in my data source but
needs to be entered in each document I merge. (ie. interest rate amount or
encumbrances on title remaining)
