Can you set up page numbering in Word 2007 so that you get (for example)

Page 1 of 20
Page 2 of 20
Page 3 of 20

and so on .....?

You'll need Page X of Y which is one of the options in Insert | Header &
Footer | Page Number or (if you're in the header/footer, as I imagine you
would be) Header & Footer Tools | Design | Header & Footer | Page Number).

Note that if you don't want bold numbers, you can insert the Page X of Y
building block from Current Position instead of Top of Page or Bottom of
Page. It still claims to be "Bold Numbers" but won't be.
