Default Creating fields in standard letter template that will overtype

I'd like to set up a template for our standard letter, which when first
viewed shows fields where information is to be typed, but with directions in
the fields, ie. address1, name, but where you only need to move the cursor to
the beginning of the field and type - the field delineation and direction
will be typed over without affecting the layout.

Also, the font styles need to be fixed so they can't be changed in each
particular place.

Any help gratefuly welcomed, thank you.
