Default Word Forms and/or Templates

I want to create a new form or a template that will allow my users to type in
unlimited text. They should be able to tab from field to field. What's the
best way to do this?

What you are describing is a protected form. See
http://word.mvps.org/FAQs/Customizat...nTheBlanks.htm and especially
the forms tutorials by Dian Chapman that this article links to.
