Default Word Table of Contents Updating

When I attempt to update a Table of Contents in a single document (~60
pages), sometimes the option to just update page numbers (what I want) does
not appear and the TOC updates all fields (what I do not want). Any
suggestions or ideas as to what I am doing incorrectly or what I need to do
to get what I want? Thanks!
