I have a Word document that is two pages in length. When I email this
document, the length spills to three pages, even my page 2 header lands in
the middle of the second page. Can I somehow fix the format to ensure that
the document is always two pages regardless?

See http://word.mvps.org/FAQs/Formatting/TextReflow.htm . To
make it more likely that what you see is the same as what your
email recipient sees, you could convert your Word file to PDF
format using Adobe Acrobat or one of its many shareware/freeware
clones and email the the PDF version.

If your page 2 header lands in the middle of the second page, then it is not
really a header (see http://sbarnhill.mvps.org/WordFAQs/HeaderFooter.htm for
instructions on setting up a real header). See
http://word.mvps.org/FAQs/Formatting/TextReflow.htm for an explanation of
what's happening to your document.
