Default Stop whole document formating change when I change one line

How do I stop the document from changing format when I want to change one
line. For example I want to add a bullet or make a line bold and when I start
typing again, the whole document is bulleted or bold. I press undo and it
goes back to having just the one line formated --- this is very frustrating
and annoying!!
