Once you delete the tracking changes, can you get them back?

Until you close the document, you can Undo to restore the changes. After the
document is closed, though, there's nothing in the file to let you recover
them.

If you think that at some later time you might want to know where the
changes were, make a backup copy of the document under a different file name
before you start accepting/rejecting the changes.
