Default Where is the "Status" DocProperty Field in Word 2007?

I've set a value in a Word Doc's "Standard" document properties for "Status".

The document is in the 97-2003 format.

Because the doc is in the 97-2003 .doc format, when I go to Insert / Quick
Parts, the "Document Property" option is not available in the drop-down (it's
grayed out). (If it was in the .docx format, I could select "Status" from
under "document property".

However, since it's in the 97-2003 .doc format, I have to go to Insert /
Quick Parts / Field.

From there, under the "Document Information" Category under "DocProperty", I
can't find "Status" as a property.

All of the other standard properties are available to insert as a field:
Author, Title, Subject, Keywords, Category, and Comments.

Anyone know how to insert a field for "Status" using Word 2007 in a 97-2003
format document (.doc)?

p.s.

I've tried first saving the file as a .docx, inserting "Status" by using
Insert / Quick Parts / Document Property / Status.

Then I re-save to .doc. When I do, the content of the property gets
converted from a field to flat text.

It depends on which 'status' you're looking to find.

Are you comparing Word 2007 properties
Office Button=Prepare=Properties
to Word 2003 properties
File=Properties
[see listing below]

or the new Word 2007 Document Property Content Controls?
Insert=QuickParts=Document Property

(If you're working with SharePoint Document Libraries there can also be Document Library Properties that will be available in the
Word 2007 Document Information Panel.

Content controls are converted to static text when saving as a Word 97-2003 document. When I save a document that has an inserted
Document Property 'Status' control in Word 97-2003 format, then close & reopen the Status in the document is now static text, but
the Status field in the Document Information Panel retained the last value before saving the document and I can still change the
value there, but it won't be reflected in the document.
The Insert-QuickParts=Document Property ability becomes available again if you activate the Word 2007 features for that document
via
Office Button=Convert
