Documents previuosly created in WORD with pagination are now showing with
{PAGE} in the footer and not the page number.
No new pagination works: when I click on the insert page number icon, I also
just get {PAGE}.
How can I rectify this?

Press Alt+F9 to switch between display of field codes (what you
see now) and field results. If that doesn't help, then in Word
click on Tools | Options | View tab | uncheck the "Field codes"
box | Print tab | uncheck the "Field codes" box | OK.
