how do I format my manuscript to pagenate and create alternating split
headers that will display the chapter titles and author name?

You use Odd and Even headers, possibly with StyleRef fields to put in the
chapter name.

I think reading these two excellent webpages will give you the necessary
knowledge to get what you want:
