Perhaps I'm missing the obvious somewhere, but how do you apply a smart tag
to selected text? I have selected the "person name" recogniser, but Word
hasn't applied a smart tag to all the names in the document. Is there a way
that I can apply a smart tag manually?

A SmartTag can only recognize what has been programmed into it. Without
knowing how this particular smarttag has been programmed, it's difficult to
say what it's using to recognize names (a hard-coded list, your Contacts
list?). But generally, no, it's not going to be possible for you to add names
to the Recognizer.
