Default Automatic Outlining in Word 2007

I want to create an outline in Word 2007. I have found the icon to go to
numbered lists, and the icon there for what looks like a traditional Outline.
I have reset the fonts to sensible things like Times New Roman. But it
doesn't automatically number as I go. I want to be able to enter the first
line as Level One, then if I hit Enter a new line should start also as Level
One, unless I then Tab, in which case it should go to Level Two. How do I
get it to do this?

Numbering the headings is a separate issue, unrelated to which view you use
to look at it. See

with that.
