when going to the "Word Options/Advanced/Display" the "Show number of Recent
Documents" option is grayed out. How do I turn that back on?

A frequent cause of this (at least in previous versions) is the application
of "privacy" options in an external app such as TweakUI. If you've
suppressed display of Recent Documents on the Start menu, for example, then
you may have disabled the display in Word as well.
