Default how do I stop word from changing the format of the whole document

When I highlight a word or sentence (Word 2003) and click on, say, "bold" the
whole document is changed to bold. When I hit the undo button, the document
returns to normal and leaves my highlighted bit bold. It is a pain having to
hit the back button all the time. Please help.

This is caused by the automatically update setting for the Normal
style. For details, see
