Default Direct formatting changes to coding

Word 2003

I have received documents from third party contributors which I have then
converted from Arial to Times New Roman - only to find that special
characters have been incorporated as a result of the font conversion.

For example€¦

The quick brown fox which comes through as being "underlined" then becomes...

UThe quick brown foxu

....once it is converted from Arial to Times New Roman.

I would be most appreciative of any suggestions or resolutions received in
this regard.
