Default compatability mode

Why when I open a word 2003 document which has symbols such as +,-,= and
other maths related symbols do they change to random sybols such as umbrellas
and clouds in word 2007?
Is there a way of fixing this?

Are the two Word versions on different computers? If so, do both computers
have the correct font installed?
