AutoText has been subsumed into Word's news Quick Parts/Building Blocks
feature. I suggest you check out Word help for a crash course in the new
feature.
Once an autotext item exists, it can be inserted by typing a unique fraction
of its name and pressing F3. AutoComplete no longer works (except for
dates).
For some of the header/footer stuff, check out the Header/Footer/Page Number
section in the Header & Footer Tools Design ribbon tab (available only when
editing a header or footer).
For Filename, type "filename" and press F3; or type "filename and path" and
press F3. (both without the quotes, of course)
Word 2007 has only the Quick Access Toolbar, so you can't add something just
to the header/footer toolbar, since it doesn't exist. However, you can add
the AutoText tool to the Quick Access Toolbar. How much utility it has for
you in the new form, however, is an open question.
