Default how do I set up text form fields in word 2007?

First go to Office button Word Options and check the box for "Show
Developer tab in the Ribbon".

Now click the Developer tab. In the Controls group, hover over the
fourth button in the second row, which should show the tooltip "Legacy
Tools". Click the button; the entire old Forms toolbar (except the
lock icon) and the old Control Toolbox are in the dropdown.

Although there's a big Protect Document button on the same tab (and
another in the Review tab), that opens the Protect Document task pane.
Although you sometimes need the flexibility the pane provides, usually
you just want to toggle the forms protection. To get the lock icon
that does that, right-click the Quick Access Toolbar and choose
Customize; select the category "Commands Not in the Ribbon"; select
the Protect Document item; and click the Add button, then OK.

I wand the regular "protect" function like the one before the 2007
ver.how do i set it?
